In honor of National Nacho Day, let’s celebrate the humble, oh-so-versatile plate of nachos. 

Everybody break out tortilla chips and cheese, because National Nacho Day is coming! On November 6th, we celebrate all things nacho. 

Nachos nowadays take many forms. From tiny rounds alongside bright yellow cheese at ballparks to fully loaded gourmet concoctions to a simple layer of chips and cheese thrown into the microwave, they can be anything from high-dollar to low-effort and everything in between to satisfy every need. 

So how did one of America’s favorite snacks come to be? Mexico, surprisingly (or unsurprisingly, depending on who you ask!). 

According to a fascinating article in the New York Times, nachos began in the Mexican border city of Piedras Negras in 1940 during World War II. A group of American army wives had crossed the border from Texas into Mexico to shop and grab something to eat at a little spot called the Victory Club. However, they’d stopped by outside of business hours and the maitre d’hotel of the club, Ignacio Anaya (also called “Nacho,” the common nickname for Ignacio), had no cooks in his kitchen. 

Unphased and unwilling to turn the women away, he threw together some odds and ends he found: some totopos (corn tortilla chips), Colby cheese, and pickled jalapeno slices. He baked the mixture until it was bubbly and served it to his guests. Surprisingly, it was a hit - the wives asked for more, then started calling the dish, “Nacho’s special.” From there, “nachos” spread throughout the town and beyond. Ever since, people have been loading up crispy tortilla chips with all kinds of meat, veggies, LOTS of cheese, sauces, and more to make the perfect bite for a snack, game-day, or an easy yet hearty meal.
